About Loulay from the Seattle Eater:
Named for his hometown of Saint Hilaire de Loulay in France, Thierry Rautureau officially unveiled Loulay Kitchen & Bar on December 4th; it’s his first project since shutting the doors of his beloved Rover’s this past June. Dinner starts at 5 pm and there are no reservations left. Regular hours of operation will be daily from 11 am to 11 pm, which gives way to many more dining opportunities.

The menu is not as preciously French as Rover’s; it more so reflects the chef’s childhood memories, “including hot chocolate with brioche and salted butter that is based on a recipe shared with my grandparents in the morning around the farm kitchen table in France.” Salmon, sweetbreads, duck confit sliders share menu space with braised rabbit and oysters on the half shell.

There’s also several sections of dining, from the six-seat chef’s counter to a 24-seat bar to a main dining room and a balcony, which, according to Rautureau, “feels perfect for an anniversary in a glowing setting. This is where the one dinner table is prominently placed, overlooking the kitchen, providing the best bird’s-eye view.” There’s also a mezzanine that seats about 30 diners and is also available for private parties.
